Unable to go thrifting yesterday but will be back on Friday!

I CANNOT wait to go thrifting this friday, yesterday I was caught up doing some laundry and meeting my friends who I haven't seen in awhile.
I am also going to search for estate sales, which I have never been to yet.
Has anyone been to estate sales? And if so what are they like or do you like thrift shops better?

Happy thrifting!

Cooking with Pyrex- Grandma Ople's Apple Pie

Here is another awesome recipe that I would like to share with you...soooo goood!

Grandma Ople's Apple Pie:

Ingredients:

2 Pie shells (Frozen) 9 Inches deep
6 Red delicious apples (peeled and cubed)
1 tsp Cinnamon
1/2 Tsp Nutmeg
1 Tbs Vanilla Extract
1/2 cup Butter
3 Tbs All purpose Flour
1/2 cup White Sugar
1/2 cup Light brown Sugar
1/4 cup water minus 1 Tbs

Directions:

  • Preheat oven to 350 degrees.

  • Peel & cut 6 Red Delicious Apples, set aside in large PYREX bowl.

  • Melt Butter in saucepan.

  • Stir in Flour to form a paste.

  • Add White Sugar, Brown Sugar, Cinnamon, Nutmeg, Vanilla Extract & Water.

(For the water: measure 1/4 cup and take out 1 Tablespoon of water from the 1/4 cup.)
Bring to a boil, make sure the syrup is thick!

  • Mix the Syrup mixture with the apples in a large  PYREX bowl.

(Save enough syrup mixture to glaze for the top of the pie crust)

(Note: Mix with your hands, will be messy but you must coat all of the apples with the syrup mixture)

  • Brush bottom of crust with the egg whites ( 1 egg) to keep it from getting soggy.

  • Add the Apple Mixture into Pie Crust.

  • Add the top of the pie crust while frozen. Be careful! You do not want to break the crust for the top layer.

  • Add decorative slits on top of crust.

  • Brush the remaining Syrup on the pie crust.
(I added Pale Pink Sugar on top to coat and give a little taste. My friend bought this for me in TJ Maxx, not sure where else you can find this)

Place the pie in the oven for 1 hour. I left it in for 1 hour and 25 minutes so the apples could be soft enough.
I also brushed the syrup on twice total, once before I put it in the oven & once 30 ish minutes while it was cooking and sprinkled extra Pale Pink Sugar.

The end result.....

My two home made pies!

Cooking with Pyrex-Walnut Pumpkin Pie

Today I was in the baking mood. I whipped up some homemade fall pies.

I made Walnut Pumpkin Pie, OUTSTANDING! First time making it and really loved it...the husband also said it was great!

I would like to share some pictures of the baking process and the recipe below, enjoy.

Walnut Pumpkin Pie:

Ingredients:

1 can of Pumpkin Puree (You only use 15 oz, so that is half the can)
1 package of Chopped Walnuts (8 oz bag)
2 egg yolks
1 (14 ounce) can sweetened condensed milk
1 Tsp Cinnamon
1/2 Tsp Ginger
1/2 Tsp Nutmeg
1/2 Tsp Salt
2 egg whites
1 (9 inch) Pie Shell
2 Tbs all purpose Flour
1/4 cup Brown Sugar
1 Tsp Cinnamon
2 Tbs Butter

Directions:

Preheat oven to 425 degrees.

  • In large bowl, mix Pumpkin Puree, Condensed Milk & Egg yolks. Stir in Cinnamon, Ginger, Nutmeg & Salt.

  • In small bowl, whip egg whites until soft peaks form.
  • Gently pour egg whites into Pumpkin mixture

  • Pour filling into pie shell & bake for 15 minutes.

While pie is baking, prepare the Streusel topping.
In small bowl, combine Flour, Brown Sugar & 1 Tsp Cinnamon.
Blend in cold Butter with fork until mixture is crumbly.

Mix in the Chopped Walnuts. It might get messy! You must mix with your hands so you coat the butter mixture with the walnuts.

Sprinkle over pie and reduce heat to 350 degrees. Bake for an additional 40 minutes.

Voila! (Above) is the end result, YUMMY!

Total baking time is 55 minutes.

No thrift shopping for me until Tuesday

Tomorrow (Friday) is usually my thrifting day! The day all to myself, and I enjoy the day with shopping. But since Hurricane Sandy came and destroyed NYC, CT, NJ & other tri-state areas I wont be able to get to CT tomorrow...not even sure if they are open!
There is a shortage of gas all over and I really want to save it for more urgent things, like food shopping, my husband going to work, emergencies etc. So thrifting will have to wait atleast until Tuesday If I am lucky. I might take a trip while I visit my mom (if she gets electricity) to a really good GoodWill. I am going nuts being in the house for 1 week straight besides going food shopping!!

Usually Friday's is the day I look forward to, to have for myself but oh well, next Friday hopefully everything will be better and I can go back to CT to thrift.

Until then it might be eBay for me and the goodwill by my moms....=(
